Who are we?<\/strong><\/h2>\n\n

CabeSota Quesos<\/strong> is a family business founded in the heart of El Campo de Calatrava, in Castilla-La Mancha, the result of decades of dedication to sheep farming. As far back as 1880, our ancestors were already grazing their flocks on our lands, and this work can be traced back even further than the 19th century. Hand in hand with this long tradition of livestock farming goes the production of artisan cheese, both of which were the way of life of our grandparents and great-grandparents. This is how CabeSota came about, a brand with its own history that perfectly defines our origins, alluding to our roots. <\/p>\n\n

Flavour, aroma, texture and, above all, freshness and youthfulness. CabeSota Quesos is in its prime. At just twenty years of age, the youngest son of this family of livestock farmers, our master cheesemaker Lorenzo Chac\u00f3n, together with his sisters Virginia and Cristina, inspired by the long history of their ancestors, decided to take the family business to the next level: making their own cheese. This cheese-making venture was born out of a love and passion for this traditional, artisanal product, instilled from birth. CabeSota Quesos produces, refines and distributes Spanish artisanal cheeses, specifically from La Mancha. <\/p>\n\n

What makes our cheese so special?<\/strong><\/h2>\n\n

\u201cThere is no modernity without a good tradition.\u201d<\/em><\/p>\n<\/blockquote>\n\n

CabeSota <\/strong>cheeses are made with pasteurised milk from sheep fed on natural pastures in the province of Ciudad Real in La Mancha. These natural plant species provide high nutritional value in the animals’ diet. For this reason, the traditional system of extensive grazing forms the basis of a natural, high-quality diet for our flocks. <\/p>\n\n

Thus, our excellent raw material, milk, together with the unique production process of our product \u2013 a fusion of traditional and cutting-edge methods \u2013 results in a product with a strong personality and undeniable supreme quality.<\/p>\n\n
