TASTE: This cheese offers an intense and deep flavor, full of complex nuances characteristic of extended aging. However, thanks to its generous size of 10 kg, it maintains a smoother and creamier texture than usual for such a cured cheese. The large piece allows moisture to be better retained inside, avoiding excessive dryness and achieving a perfect balance between firmness and creaminess. On the palate, it combines evolved lactic notes with toasted touches, a slight hint of butter and a persistent and aromatic finish, ideal for palates seeking power without sacrificing juiciness.

PAIRING: It is a great companion for dry wines, semi-dry wines and cavas. It is also the most recommended for main dishes, tapas and even desserts.
