Mature-cheese cheesecake

Ingredients

Method

Preheat the oven to 200ºC and line a cake tin with baking parchment.

Put all the ingredients in a Thermomix bowl: mature cheese, cream cheese, flour, cream, eggs and sugar. Blend.

A Thermomix or similar is ideal, but a regular blender at an appropriate speed and power also works. Once thoroughly combined, carefully pour the mixture into the lined tin.

Bake for 40 min., aiming for a lightly golden top. You can switch on the grill after baking to achieve this.

Remove from the oven and let cool, then refrigerate for a few hours before serving to obtain the desired texture.
