This cheese represents the purest essence of La Mancha tradition. Handmade with pasteurized sheep’s milk, its rind is covered with a generous layer of lard infused with wild rosemary, which intensifies its aroma and gives it an authentic, enveloping and slightly spicy flavor profile.
When cut, it reveals a firm but creamy texture, with an elegant and penetrating aftertaste, reminiscent of roasted nuts such as walnut or hazelnut. Lard and rosemary act as natural preservatives, but also as flavor enhancers, offering a rich and complex sensory experience.
Food pairing
Ideal for pairing with medium-bodied red wines, such as Syrah or Merlot, which harmonize with its intensity without masking its character. It also shines on gourmet boards, accompanied by nuts, rustic bread or fig and grape jams.
